Yesterday Alana and I had our very first cupcake party. We bought all kinds of lime green and white tableware for the occasion. Alana surprised me with an early birthday present, a shiny red stand mixer. I finished two batches of cupcakes and icing in an hour, including time to wash utensils / mixing bowls / measuring apparatus in between! Baking will never be the same.

I made these awesome vegan lemon cupcakes from Bake and Destroy. Halving the recipe didn’t quite work out though, so my cupcakes didn’t fill the wrapper enough to ice them properly. I also did a batch of very un-vegan vanilla buttercream. In digging around for the recipes I found out Vegan Cupcakes Take Over the World has a blog, with links to some really great flickr cupcake photosets. If you dig around you’ll see where I got the idea to stamp out the lemon rinds into little flower toppings. On the menu were vegan beer brats, vegan black bean cous cous, vegan potato salad and margaritas. Our friends made several delicious varieties of ice cream cone cupcakes, thanks to Williams-Sonoma. I was able to send everyone home with plenty of cupcakes with boxes from the new Martha Stewart Crafts collection. For some reason the photo on her site shows them in white, mine were pink, yellow and green.

I need to get a tripod so I don’t have to use a flash inside. I only managed to get two halfway decent pictures.

    Bummer! If you ever need a recipe I post halved, let me know, because I’m probably th one who doubled it in the first place!

    Hey thanks a lot! Even though they didn’t come at as big as I’d hoped they were amazingly delicious. Everyone liked them better than my non-vegan cupcakes.

    I always assume a lot of recipes I find online are from people making much larger quantities than I am, or caterers, so I’m not really surprised when something doesn’t translate quite right to a teeny batch :) I might have to make these again soon, because I only got one before they were all gone!

    Yeah, I just doubled the recipe because I was selling a dozen to a cafe but wanted another dozen for a friend’s party so I have the recipe for a dozen somewhere around here. If you want it, let me know and I’ll email it to you!
